Have your New Year’s Resolutions been a success or already hit the buffers? To support those of us trying to stay in shape, The American Express Community Stadium (The Amex) in Brighton is giving corporate guests a helping hand with a new superfood-rich menu.
The menu will appeal to the health-conscious delegate at The Amex Stadium, home to Brighton and Hove Albion Football Club and, appropriately for a sporting venue, our chefs have had fun creating nutritious and delicious dishes packed with fresh ingredients, bold seasonal flavours and bursting with health benefits. As the sales and marketing manager on site I’ve been lucky enough to test the development menu – and our delegates are in for a treat!
Guests can choose from a selection of different salads including kale, clementine and feta with sharp citrus dressing, cherry tomato, spelt, pickled shallots and parsley, Moroccan cous cous and roasted butternut squash, pomegranate and roquette.
These are served with a choice of dressings including Caesar, honey and grain mustard, Thousand Island and balsamic and extra virgin olive oil.
Diners can then choose from a selection of ‘hot toppers,’ such as soy and spring onion roasted salmon fillet, rosemary and garlic marinated halloumi cheese, Cajun-spiced mackerel fillet and garlic and lemon thyme chargrilled chicken breast.
We haven’t forgotten dessert, and offer a guilt-free alternative in the form of fresh fruit salad, rounding off a menu rich in antioxidants, nutrients and vitamins, without skimping on flavour.
I’m excited that we can offer these light and healthy menus which are tasty and satisfying but won’t take a toll on the waistline.
If you’re looking for a venue with a wide choice of conference and event suites, great views of the countryside or pitch and is easy to get to by train or road (including plenty free parking) we are an ideal choice.
